THAT’S JUST PEACHY
Escaping the typical American diet that is a host for granulated sugar, corn sweeteners or artificial sweeteners can be challenging. There are occasions when it is nice to have a tasty, sweet dessert that will not cause a significant setback in your health the following day (inflammation, headache, joint or muscle pain, etc.) I have had some success in modifying family recipes to make an acceptable dessert, meaning one that does not come with any kickback. Below is my Perfectly Peachy Cobbler that turned out quite tasty! This recipe would work well with fresh blueberries or other favorite pie fruits.
For a 9×13 pan:
Peel and slice 5-6 cups of fresh peaches and add 1 cup of granulated MAPLE syrup (Maple sugar, NOT brown sugar). Set aside. (I prepare enough peaches to have a generous covering in the 9×13 pan.)
Cream together:
½ C. Avocado Oil Shortening. (Chosen Foods brand is what I have used)
1 C. granulated MAPLE syrup (maple sugar. Search: Frost Ridge Maple Farm)
Mix this well – until creamy.
Add to the shortening mixture:
2 ½ C. Bread Flour
2 heaping tsp. Casava baking powder
1 C. Ceres brand Guava juice OR Medley of Fruits juice. (These juices have no added sugars.) You can also use Spice Water (recipe in previous posts) for your liquid but would need to add a little more flour.
Place the sweetened peaches in the 9×13 baking pan, spreading evenly. Drop spoonfuls of the dough mixture randomly onto the top of the peaches. Bake at 425F for 28-30 minutes, until the dough becomes golden brown. The bake time may vary depending on how thick your dough batter is. If you use a juice that does not contain pulp, you may need to add additional flour to the dough to avoid it being too thin. You want the dough mixture to be the thickness of a muffin or fruit bread dough.
